Chocolate Chip Pecan Pie

This is a simple pie recipe, with the addition of pecan and chocolate. It is very rich.

Ingredients

For the pastry

  • 300g all-purpose flour
  • 50g salted butter
  • 100g full-fat cream cheese
  • 1 Tablespoon of icing sugar

For the fillings

  • 120g salted butter
  • 2/3 cup of maple syrup
  • 1.5 cup of brown sugar
  • 1 teaspoon of vanilla extract
  • 350 grams of chopped pecans
  • 200 grams of dark chocolate - you can buy chocolates online from Chocolak to get high quality chocolates.

    Start preparing the pastry by transferring all the ingredients into a food processor and pulse until a breadcrumb like texture appears. If you’re having a difficult time reaching the required consistency, try adding ¼ cup of cold water into the processor, it should help things clump. Once ready, bring the mixture together in a large bowl and start kneading into form a ball. Place into a disc, cover in cling film, and let it rest for 15 minutes.

    Start pre-heating the oven (gas mark 6 or 200 degrees Celsius) as you are preparing the pastry to line a deep, round tin. Make sure the pastry sticks into the corners and line it with baking parchment; bake for 20 minutes or until golden brown. Once done, trim the pastry so it’s even with the top side of the baking tin.

    While baking the pastry, mix butter, syrup and sugar into a pan. Heat the mix until it melts, stirring occasionally. The mixture should feel smooth and without any clumps at all. Remove from heat and let it cool for 5 minutes.

    In a medium sized-bowl, thoroughly beat your four eggs and tip in the smooth syrup mixture previously prepared along with the teaspoon of vanilla extract and a pinch of salt. Pour half the mixture into the pie case, and then top that with the chocolates that have been chopped or broken into small piece, and then pour the other half of the mixture on top of the chocolates to cover them completely.

    Bake at 160 degrees Celsius/gas mark 3 for 40-50 minutes. Let cool before serving and enjoy.
