Chocolate and Pistachio Ice Cream Bowl

Who doesn’t love chocolate ice cream? With temperatures soaring, it’s usually one of my go-to treats to cool off especially after a long day out. As I’m always on the look for trying new flavors, I’ve decided to try doing it myself and create a perfect chocolate ice cream bowl – with a twist of pistachio. Pairing nuts and chocolate isn’t new, but it’s mostly peanuts, walnuts, or almonds. Pistachios are an amazing healthy snack by themselves; after all they are part of the healthy fat group.

Now mixing them with some delicious chocolate ice cream can create a distinct flavor not easily found in stores. Of course, dark chocolate doesn’t work here, so you’ll need a quality chocolate that is not filled with sugar to sweeten it. Ingredients

  • 3 cups low-fatmilk
  • &frac34 cup sugar
  • 4 egg yolks
  • 100 grams of smooth chocolate- you can buy chocolates online from Chocolak to get high quality chocolates
  • 1 teaspoon vanilla extract
  • 1 cup of pistachios

Procedure

    Place your ice cream maker bowl in the freezer, and in the meantime boil the milk with only half of the sugar.

    While waiting for the milk to reach a boil, crack your eggs and separate the egg yolks and whip them with the rest of the sugar in a medium-sized bowl.

    Melt the chocolate in the microwave, at 30 second-bursts.

    Once melted, add it to the egg yolk and sugar bowl.

    Add ½ cup of the hot milk to temper the eggs and whisk well. Now add another ¼ cup and whisk again. Slowly pour the contents of the egg yolk bowl to the rest of the hot milk and stir for 2-3 minutes until the consistency thickens.

    Remove from heat and place everything into the frozen bowl, stirring in the vanilla extract. Place in the fridge to cool it overnight.

    The next morning, pour the mixture in your ice cream maker and freeze it to desired consistency. Add in the chopped pistachios and serve in a bowl.

    TIP: you can even buy the biscuit cones and scoop your ice cream in them if preferred.
