Chocolate and Nuts Pasta

Two food items that should not be together, can actually provide us a great recipe to go a bit unconventional yet creative. Chocolate and pasta, when you won't find them together in most cookbooks or chocolate gift boxes, can actually deliver a great dish for those with adventurous taste buds. To create your own pasta dish from scratch, I always stress on the importance of quality ingredients and this recipe is no different. Don't expect to toss in whatever left-overs you had at home and expect an impressive dish.

I prefer to order chocolates online from high-end retailers, such as chocolak.com to ensure a great taste and no added preservatives that can ruin a dish.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • ¼ cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon of chocolate syrup
  • Pinch of salt

For the chocolate sauce:

  • 150 milk chocolate – you can buy chocolates online to find these chocolates at Chocolak
  • 2/3 cups of heavy cream
  • ½ cup of raspberries
  • 1/3 cup toasted walnuts
  • 1/3 cup of toasted hazelnuts
  • Fresh crème for garnishing

Procedure

    Let’s start by preparing the pasta: In a large bowl, mix together the flour, cocoa and sugar. Create a hole in the center of the mixture, to place the eggs in the middle.

    Add a pinch of salt, a tablespoon of chocolate syrup and the vanilla.

    Start mixing everything in the middle with a fork. Slowly incorporate the flour by using the flour on the sides of the bowl. As you use more flour, you will start seeing the dough appearing. Once your dough is thick enough, use a spatula for easier mixing.

    In case the dough is too dry, you can add 1/3 cup of water. On the opposite hand, if your dough was still sticky, you can add ¼ cup of flour.

    Once ready, start kneading the dough until it becomes smooth.

    Shape into a disc and place in the fridge for around 20 minutes.

    Once rested, divide your dough into medium sized quarters and shape it into a rectangular shape. You will need to use a pasta sheeter to create perfect pasta.

    Once you have a pasta sheet, cut it into ½ inch ribbons and flour them to keep from sticking.

    To prepare the sauce: Boil the heavy cream and let it simmer while melting the chocolate in it. Add a pinch salt keep whisking until a creamy sauce is formed. Remove from heat and set aside.

    Cook the pasta in boiling water for a few minutes. Quickly remove the pasta and toss it gently with the sauce and use a bit of the pasta cooking water to thicken its consistency.

    Place the pasta and sauce on serving plates and garnish with the raspberries, toasted nuts, and garnish it with fresh cream.
